Creamy, Peanut-Buttery, Protein + Collagen Overnight Oats Recipe

Good morning!

I know back to school is just around the corner for many of you, and some of you have even started already! I wanted to share this simple + delicious overnight oats recipe with you that will be perfect for heading back to school. They are an easy *no-bake* make ahead breakfast that you can quickly grab and take with you on the go for your kiddos and yourself too!

A friend of ours visited us over the summer and shared the recipe with us, and we’ve been making them consistently every week since she left! They are super creamy and peanut-buttery! The nice part about overnight oats in general, is you really can adapt it  to make them how you want. You can add in different ingredients if you want a different type of flavor, and you can top them in the morning when you’re ready to eat them with all sorts of different things, too. Collins LOVES these and she enjoys getting to pick out her toppings in the morning!

My go to toppings have been: blueberries, raspberries, strawberries, mini chocolate chips, and Purely Elizabeth maple probiotic granola (Purely Elizabeth is my favorite granola brand!), and Navitas brand goji berries . Again, you can totally make these what you (or your kids!) want them to be, so there is lots of room for creativity and flexibility with these toppings.

t h e  r e c i p e . . .

In a mason jar or refrigerator-safe jar/glass:

Add in:

2/3 cup almond milk or coconut milk

*optional* add 2 scoops Vital Proteins Collagen Peptides or 1 scoop Vital Proteins Beef Gelatin (makes them super thick!) with 1 scoop of Vital Proteins Collagen Peptides

1/3 cup old fashioned oats

1/3 cup greek yogurt – I use vanilla!

1 tbsp flax seed meal

1 tbsp chia seeds

1 tbsp PB

Mix all ingredients together in jar until combined completely, cover with mason jar lid or  tinfoil, place in fridge, & enjoy in the morning with your choice of toppings! It’s that fast and easy!
